Sam's Beef Stew

It’s November. It’s cold, wet and rainy and since we turned the clocks back, it gets dark at like 5:00 PM.


It is time for some comfort food!!



One of my favorite cold weather comfort foods is beef stew. Pair this beef stew with some nice fresh bread and a Sunday afternoon football game on a cold, wet day and you will feel so much better! It’s even better the next day…if you manage to have leftovers. You can also scale this recipe up by doubling if you have a bigger crowd.


It’s best to start this recipe early and then let it sit for an hour or so and just reheat it in the same pot to enjoy it. Hope you like it!


Ingredients:

1-1½ lbs stew beef

1 onion, diced

1 medium carrot, diced

2-3 stalks celery, diced

1-2 small/medium potatoes, diced

4 cups beef broth

8 oz beer (prefer dark stout/ale)

Flour

Salt

Pepper

Bay leaves

Parsley


Cut stew beef into small cubes (that will fit onto a spoon), sizes can vary. Dredge them in flour. Heat oil in stew pot and sear beef on all sides (does not need to be cooked through). Flavor with salt and pepper. Add in onions, carrots, celery and potatoes. Saute for a few minutes, lid on, to soften vegetables.


Add beef broth and bring mixture to boil. Scrape bottom of pot to get all flour from bottom. Once boiling, bring to a simmer, add salt pepper, 1 T parsley, and 2 or 3 bay leaves and stir thoroughly. Add beer and keep lid off, stirring until foaming stops. Once foaming stops, put lid on and simmer 45-60 minutes stirring occasionally.


You can serve this in a bowl over rice or egg noodles with a side of bread and a beer or red wine! Buen apetito!
